Introducing Our First Brewers Cup Champion with Kiki: Inthat Ueasakaree

We are thrilled to celebrate another huge milestone for Ni Wares — Kiki has just won its first national brewers cup! Congratulations to Inthat Ueasakaree, the newest Brewers Cup Champion, who brewed his way to victory using our very own Kiki.

Inthat, a passionate home brewer, brought a unique and heartwarming theme to the stage: “Brewing coffee is like completing a jigsaw puzzle.” Every step of the coffee journey — from origin, processing, roasting, and brewing, to the final sip — is a piece of the bigger picture.

🧩 The Coffee as the Puzzle Image
He brewed Lost Origin’s Santa Maria Natural Process Geisha, grown by Edwin Santa Maria in Boquete, Panama. Grown at 1,800 MASL in volcanic soil, this coffee was cold-fermented for 4 days in stainless steel tanks to build lactic acidity and sweetness, then slow-dried for 30 days to achieve a clean tropical fruit profile — with standout notes of pink guava, red grape, and orange.

🔥 Roasting as the Puzzle Pieces
Inthat roasted the coffee on a Stronghold using dual profiles — one highlighting red grape and pink guava (170°C), the other enhancing orange (172°C). This layered approach brought complexity and clarity to the cup.

💧 Brewing as Puzzle Assembly
Using his custom “step pouring” technique and the Solo Dripper paired with Sibarist Fast filters, he poured in four stages (40g → 50g → 60g → 70g) every 30 seconds. The first three pours at 92°C boosted acidity and sweetness, while the final pour at 85°C preserved the delicate pink guava notes. Brew water was set at 45 ppm using Aquacode, and the coffee was served in three Kiki cups — preheated for uniform extraction.

Kiki’s tall form and thicker dual-lipped side elevated the tasting experience, enhancing aroma clarity, sweetness, and mouthfeel. Its pink hue perfectly matched the tropical fruit profile of the coffee, making Kiki both a sensory and visual extension of the cup.
